How to use as marinade
(Shio Koji / Chive Salt Koji / Yuzu Kimchi Koji)
How much to use
10% Shio-Koji of the weight of the material
EX)
・100g Poultry, Meat or Fish
・10g Shio-Koji or Chive Salt Koji or Yuzu Kimchi Koji
How to prepare
Poultry or meat : Cut or slice into small size or poke with fork a few places on whole mterial
Fish : Slice in fillet size
Marinate with Shio-Koji or Chive Salt Koji or Yuzu Kimchi Koji at least 30 minutes up to a couple of days in a refrigerator or freezer*(see note)
How to cook
Pan fry : Medium heat with a bit of oil, 5 minutes or until it gets brown color on the bottom. Turn over, reduce the heat to low and put a lid on for 5-10 minutes or until fully cooked.
Air fryer / Oven : 385F for about 30-45 minutes (poultry and meat), for about 15-25 minutes(fish)
Baking time may vary depending on the oven or air fryerBroil (fish): Place fish on a tray with parchment paper, low broil for about 5 minutes, flip and cook more for 5 minutes or until the fish gets nice and brown on top.(easy to burn so please keep eye on it)
NOTE
* You can freeze marinated protein in a reusable bag. Freeze after applying Shio-Koji or Chive Salt Koji or Yuzu Kimchi Koji. Use it with in a month.
Thaw in a refrigerator for overnight, or you can pan fry the frozen one, just cook longer.
