Quick Cucumber Kimchi
Ingredients
1 cup Cucumber sliced
Pinch salt
1~2 tsp Yuzu Kimchi Koji
Instructions
Thinly slice cucumber
*Sprinkle salt, lightly knead and let it sit at least for 30 minutes
*Squeeze out excess water
Mix cucumber and add Yuzu Kimchi Koji and mix well
*You can skip 2 & 3 if you like more fresh cranchy cucumber
