Sweet Koji Banana Bread
A moist, fluffy, protein-packed treat perfect for breakfast or snacking.
Customize with cacao powder and your favorite toppings like chocolate chips, cacao nibs or hemp hearts for an extra indulgent twist.
Ingredients
Wet:
1 cup ripe mashed banana
½ cup peanut butter (or any nut/seed butter)
1 egg
⅓ cup coconut oil
¼ cup coconut sugar
1 tsp vanilla extract
Dry:
1½ cups flour (or 1 cup flour + ½ cup cacao powder for a chocolate version)
1 tsp baking soda
½ tsp salt
Optional Toppings:
Cacao nibs, chocolate chips, hemp hearts, etc.
Instructions
Preheat oven to 345°F (175°C).
In a large bowl, mix wet ingredients until well combined.
Add dry ingredients to wet mixture and stir until just combined.
Pour batter into a greased or lined baking pan of your choice.
Sprinkle with toppings if desired.
Bake according to pan size:
Loaf pan (9x5 inch): 40–55 minutes
Square pan (8–9 inch): 25–35 minutes
Check for doneness by inserting a toothpick into the center—it's ready when it comes out clean with a few moist crumbs.
