Sweet Koji Banana Bread

A moist, fluffy, protein-packed treat perfect for breakfast or snacking.
Customize with cacao powder and your favorite toppings like chocolate chips, cacao nibs or hemp hearts for an extra indulgent twist.

Ingredients

Wet:

  • 1 cup ripe mashed banana

  • ½ cup peanut butter (or any nut/seed butter)

  • 1 egg

  • ⅓ cup coconut oil

  • ¼ cup coconut sugar

  • ¼ cup sweet koji (cacao or traditional)

  • 1 tsp vanilla extract

Dry:

  • 1½ cups flour (or 1 cup flour + ½ cup cacao powder for a chocolate version)

  • 1 tsp baking soda

  • ½ tsp salt

Optional Toppings:

  • Cacao nibs, chocolate chips, hemp hearts, etc.

Instructions

  1. Preheat oven to 345°F (175°C).

  2. In a large bowl, mix wet ingredients until well combined.

  3. Add dry ingredients to wet mixture and stir until just combined.

  4. Pour batter into a greased or lined baking pan of your choice.

  5. Sprinkle with toppings if desired.

  6. Bake according to pan size:

    • Loaf pan (9x5 inch): 40–55 minutes

    • Square pan (8–9 inch): 25–35 minutes

  7. Check for doneness by inserting a toothpick into the center—it's ready when it comes out clean with a few moist crumbs.
